
Chicken and dumplings
Ingredients :
1 large chicken – boiled, skinned, and deboned
1 carton of chicken broth
1 can cream of chicken soup
3 Tablespoon of flour
1 package of frozen dumplings
Season to taste (I like using garlic and herb seasonings with sea salt)
Instructions:
while your chicken is cooking in the pot thaw the dumplings by laying them on the counter. They will be easier to work with if thawed.
In a large boiler pot, boil the chicken until it is falling off the bones. Remove the chicken and all the bones, but be careful because it will be very hot.
while the chicken is cooling, add the carton of chicken broth to the broth already in the pot.
continue to heat the broth until it is slowly boiling.
Add you cream of chicken soup
slowly add your deboned chicken back into the pot.
mix your little bit of flour to a small cup or bowl of water and mix well.
add your flour mixture to your pot of chicken and broth.
slowly add your thawed dumplings (one or two at a time and stir)
Season with your garlic and herb seasonings
let simmer until the dumplings are done (about 20 to 25 minutes)
This also goes good with cornbread

Orange Chicken
Chicken breast, cut into pieces
2 eggs, whisked
1/3 cup corn starch
1 cup flour
Oil for frying
Pinch of salt
(orange sauce)
Orange marmalade
2 Tablespoon soy sauce
1/4 teaspoon ginger
1/4 teaspoon garlic powder
Red peppers and pineapple (optional)
(instructions)
-Orange sauce-
In medium sauce pot, add orange marmalade, soy sauce, ginger, and garlic powder. Heat for 3 minutes.
-Chicken-
Place flour and cornstarch in shallow dish, add pinch of salt, stir.
Whisk eggs in another shallow dish.
Dip chicken pieces in egg mixture and then dip in flour mixture.
Heat oil over medium high heat, cook chicken in batches, cook 3-4 minutes until golden brown.
Toss chicken in orange sauce. Heat thoroughly.
Serve with rice and egg rolls

Chicken Fried Rice
Ingredients:
1 lb. Chicken breast (2-3 boneless chicken breast), cooked and shredded
3 cups cooked rice
2 Tablespoon Sesame oil
1 small white onion, diced
1 cup peas and carrots mix (thawed)
3 Tablespoon Soy Sauce
2 eggs, beaten
Instructions:
- Cook and shred chicken
- In a preheated large skillet, add sesame oil
- Add the onions, peas, and carrots and cook until tender
- Push the onions, peas, and carrots to one side, then add eggs, then scramble.
- Add cooked rice and shredded chicken to the cooked onions, peas, carrots, and eggs.
- Add soy sauce
- Heat the rice and vegetable mixture until throughly heated.
