Sweet Potato Casserole

This recipe has been my families favorite for many years. I even set it on fire a time or two during Thanksgiving get togethers. So I can guarantee it burns evenly.

2 40 oz. cans of sweet potatoes
1 20 oz. Can of sweet potatoes
3/4 cup granulated sugar
3 tablespoons of butter, melted
1/2 salt
1 teaspoon vanilla
2 eggs beaten
2/3 cup brown sugar
1//3 cup of Orange juice
Marshmallows
Cinnamon sugar

. Preheat oven to 350*


• Place potatoes in a large bowl, mash them really good, add granulated and brown sugar, melted butter, orange juice, salt, and vanilla.

Beat with mixer until smooth, add eggs, and beat well.


• Coat the baking dish with cooking spray, pour mixture into baking dish.


• Line the top of casserole with the marshmallows.

Sprinkle top with cinnamon  sugar,  bake in the oven for 30 minutes, or until the marshmallows are golden brown.
